cinnamon streusel cake

I tried a new recipe for Bunco last night!  I actually found a couple of recipes and used the best parts of both and then changed a couple of things to make my own creation!  It was REALLY good!

The girls said it tasted like a cinnamon roll- donut cake. It would make a great coffee cake for company that's coming for breakfast or bruch also.

Cinnamon Streusel Cake
Ingredients:

Cake
1 box of yellow cake mix
1 small box of instant white chocolate pudding
1/2 cup of veggie oil
1 1/4 cups water
4 eggs
1 tablespoon cinnamon

Streusel Topping                                         Glaze
1 cup flour                                                ¾ cup powdered sugar
1 cup brown sugar                                     1 Tblsp milk
I Tablespoon cinnamon                               1 tsp vanilla
1/2  cup butter (1 stick)                             (mix these together)
1 cup pecans, chopped (optional)

 Directions:
In mixing bowl, combine cake mix, puddings, oil, water, eggs and one tablespoon cinnamon with electric mixer.

In another mixing bowl, combine streusel topping ingredients: flour, brown sugar, cinnamon, butter, and pecans (optional)

In a greased and floured bundt pan, sprinkle ¼ of the streusel mixture in the bottom.  Pour half of the cake batter.  Layer ½ of the streusel mixture, then the other half of the cake batter, then the last ¼ of the streusel mixture on top.  Invert cake to plate to cool.  After cake has cooled, pour glaze on top!

I was so excited with how great it turned out! I'd thought I'd share with the 2 people that probably still read my blog. HA!

Dad's Italian Soup

This is a recipe that my dad came up with.
It's always a hit whenever I make it for friends and family!

1 lb of sausage, hamburger, OR chicken - your choice
1 yellow onion
2 medium carrots
1 celery stalk
8 cups chicken broth
8 oz can tomato sauce
14 1/2 oz can diced tomatoes (I use petite)
1 Tbsp garlic powder
1 tsp dried oregano
1/2 tsp dired rosemary
1/2 tsp dried basil
1/4 tsp dried thyme
1 bay leaf
1 to 1 1/2 cup pasta -(shells, orzo, macaroni, bow ties, etc.Sometimes I mix them. :)

Brown meat and put into soup pot. Add diced onion, carrots, and celery.  Cook vegetables until celery and onion are soft.   Add rest of ingredients except pasta. Stir and bring to a boil. Let simmer until ready to add pasta. Bring to a boil, add pasta to soup, serve when pasta is tender. (DO NOT add more than a cup to a cup and a half of pasta! It looks like there's not much in the pot at first, but eventually the pasta absorbs the soup and takes over if you're not careful!)

I usually provide cheeses like feta or grated parmigiano reggiano for people to add to their bowl of soup.    You could also use mozzerella or other favorites!

Serve with your choice of bread or crackers and enjoy!!!!

what's black and white and red all over?

...not a newspaper, HA!
It's my new subway art project!

I am so excited to share with you something I made this weekend!  I have seen so many bloggers making  various types of subway art, and I have been wanting to try one myself.

I painted a canvas black, but only painted one coat so it had a little of the white showing through.  I liked the look.  Then I made words that made me think of Carson or things he liked with my Cricut.  I used a few different fonts.  I glued them on using Mod Podge.

I need a little more practice with the Mod Podge to make it look a little more "professional."  But,  I do think it turned out very decently for my first try!!!!

I hope to hang it up in his playroom very soon.

And... I posted a new recipe on my recipe blog, FINALLY!  It's an EASY PEASY dinner that will taste wonderful!!

feathers and muffins

For Columbus week, Carson made an Indian headband...

Carson was in charge of making the cornbread muffins for dinner. He put the liners in the pan, stirred up the ingredients, and helped me scoop them up.

This is a picture he took of the muffins...
