This was Carson's first tubing experience...
...and he LOVED it! He was on it forever.

He swam...
and drove...
He loved it. I think he'd be very happy if we'd buy a boat ourselves.
The next day, Mindy made homemade ice cream. It was delish!
And popcorn in a popcorn popper. He was spoiled just a bit. ;)
Monday, we went to a local Bar-be-cue joint to try some NC style BBQ.
There was an actual bus inside the restaurant. People could sit at tables on the bus and eat.
Mindy's brother and his girlfriend had also come to visit.
Since it was July 4, we got some poppers and sparklers for Carson to have fun with.
Our last day in NC, Eric, Carson and I went back to the mountains to a place called Grandfather Mountain.
The trip up the mountain was very beautiful, but there were not many places to stop and potty. We were very thankful to see Christa's for a break!
There is a steel, swinging bridge at the top of Grandfather Mountain. It was rainy and foggy, but the view was still spectacular.
Teacher friends: I thought this would be a super visual for our 1mi = 5,280 ft lesson!
We are so thankful that we were able to go see Angie and Mindy. They spoiled us and we had such a super time. There house is beautiful! All nestled in behind this grove of tall, skinny trees.

We got up at 3:00 am to leave by 4:00 for the airport. Our trip home seemed to take forever. If we had to leave, I wanted to get home quickly. I believe next time I go to NC, I do NOT want a layover- if I can afford it.
We stopped at Olive Garden to each a late lunch in KC. Olive Garden is always a choice that pleases Carson.
And after a quick stop for Momma...
...we drove home. Carson and I were OUT! Eric drank 5 red bulls and caffeine at lunch in order to stay awake. I just couldn't do it.
Vacation ~ NC 2011 is officially over, and summer will be gone before we know it! :(
